Sushi rice
can be molded into various shapes for beautiful presentations.
In Asia, sushi refers to the vinegared rice served with the raw fish, not the fish itself. The rice, usually a medium-grained type, is first cooked and then molded. Traditional sushi molds are made of wood, but plastic molds are becoming very popular for the home cook. Plastic sushi rice molds are available in a variety of shapes and can be found online or at Asian markets. Add this to my Recipe Box.
Instructions
1. Cook one cup of rice according to package instructions. At the end of the cooking time, remove the saucepan from the heat and allow the rice to sit for 10 minutes. Fluff the rice with a fork.
2. Add 8 teaspoons of vinegar, 4 teaspoons sugar and 1 teaspoon of salt to the rice. Again, fluff the rice to stir in the mixture. Allow the rice to cool.
3. Spoon the rice mixture into the rice molds, pressing firmly to shape the rice into the design of the mold.
4. Press the bottom of the rice mold inward to remove the molded sushi rice from the container. If the rice does not release easily from the mold, hit the bottom of the mold against a counter top or tabletop, much as you would an ice cube tray.
5. Decorate the sushi rice with nori, sliced vegetables and fish or seafood.
